Crab and Strawberry Salad with Lime
Yield: 4

Ease of preparation: Easy
Preparation time: 10 minutes
Ingredients:
Crab and Strawberry Salad with Lime

* Flesh of 1 avocado cut into 1/2 inch (2.5 cm) cubes
* 1 x English cucumber, peeled, deseeded and cut into 1/2 inch (2.5 cm) cubes
* 1 cup (250 ml) fresh strawberries, cut in halves
* 1/2 lb. (225 g) Snow Crab
* Juice of 1 lime
* 2 tbsp (30 ml) olive oil
* Salt and pepper


Directions:
Crab and Strawberry Salad with Lime

1. In a bowl, carefully mix all the ingredients. Salt and pepper.
2. Serve immediately.
3. Note: The Snow Crab season in Quebec (Lower Saint-Lawrence and Gaspé) is in the spring. If fresh Snow Crab is unavailable, you can use frozen Snow Crab in sections, or use another variety of crab. It can also be substituted with lobster or shrimp.

Caribbean Salad 2

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don?t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!
Ingredients:
For the Salad Base:

* 6 cups of mixed salad greens
* 3 x green onions, sliced
* 1/2 cup of fresh cilantro leaves
* 1 cup shredded coconut, toasted
* 1 x mango, peeled, pitted and sliced

For the Coconut Lime dressing:

* Zest and juice of 2 limes
* 1/2 cups of coconut milk
* 1 tbsp of fresh ginger, grated
* Salt and pepper


Directions:
For the Salad Base:

1. Put dressing ingredients into a jar with a tight fitting lid and shake well. Add salt and pepper to taste. Toss with the greens.

A Summery Salad

Ingredients:
A Summery Salad

* 1/4 English cucumber, peeled and diced
* 1 to 2 ripe tomatoes, seeded and diced
* 1 x roasted red pepper, peeled, seeded and diced
* 1 x small purple onion, diced
* 1 x bunch fresh mint leaves, chopped
* 1 x clove garlic, minced (optional)
* A few spoonfuls of olive oil
* A dash of red wine vinegar
* A squirt of lemon juice
* Salt and pepper


Directions:
A Summery Salad

1. Toss the diced vegetables with the chopped mint. (Vegetable sizes vary, so with this in mind, adjust quantities to suit your taste.) Season to taste at the last minute with olive oil, red wine vinegar, lemon juice, salt and pepper, and garlic. Scoop the salad into bib lettuce “boats,” and serve. This is also good with goat cheese or feta cheese scatter on top.
