Recipe

Anna Olson's Banana White Chocolate Loaf

INGREDIENTS

1/4 cup unsalted butter, room temperature
1/3 cup sugar
1 egg
1 tsp vanilla extract
1 1/4 cups pastry flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup mashed banana
1/2 cup white chocolate, chopped, plus some for drizzling

DIRECTIONS:

1. Preheat oven to 350 F. Grease and flour a 6 Ω x 3-inch loaf pan.
2. Cream butter and sugar together until light and fluffy. Beat in egg and vanilla extract.
3. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon and salt. Add to creamed mixture alternately with banana.
4. Fold in chopped white chocolate. Scrape batter into pan and spread evenly.
5. Bake for 30 minutes until a tester inserted in the center of the cake comes out clean.
6. Allow to cool 10 minutes in the pan, then turn out onto a plate.

ASSEMBLY:

Melt white chocolate and drizzle on to cake.

Mushroom Cheddar Vegetarian Burgers
Yield: 4

Ingredients:
Mushroom Cheddar Vegetarian Burgers
2 tsp vegetable oil
1 small onion, grated
1 1/2 cup finely chopped mushroom
1/2 tsp dried Italian herb seasoning
1 x 19 oz can white kidney beans, drained, and, rinsed
1 egg, yolk, lightly, beaten
2 tbsp dry breadcrumbs
1/4 tsp pepper
3 oz old cheddar cheese, sliced
4 lettuce leaf
4 whole wheat pita, breads

Directions:
Mushroom Cheddar Vegetarian Burgers
In nonstick skillet, heat oil over medium-high heat; cook onion, mushrooms and Italian seasoning; stirring, for about 8 minutes or until mixture is just starting to brown and liquid is evaporated. Let cool slightly.
In bowl, mash kidney beans with fork. Add mushroom mixture, egg yolk, bread crumbs and pepper; mix well. Shape into four 1/2 inch (1 cm) thick patties. (Make-ahead: Cover and refrigerate for up to 6 hours)
Place patties on greased grill over medium-high heat; close lid and cook for 5 minutes or until golden brown. Sandwich along with lettuce in pitas.
